Roasted coffee beans will reach its peak freshness approximately 3   days after roasting and can stay fresh for 2-3 weeks. 

Another way to see if the coffee is fresh is from the BLOOM- (foamy bubbles on top of the grounds as you brew.) A pale foamy bloom is a sure sign of fresh coffee!
